Cheese straws #2 recipe

information

With a subtle cheese flavour, these pastry straws' are as light as air. They are good to serve with drinks before a meal as they are not too filling.

ingredients

100 g (4 oz) flour
Salt
Pinch of cayenne pepper
50 g (2 oz) butter
50 g (2 oz) Cheddar cheese, finely grated
1 egg yolk, beaten

method

1. Sift the flour and seasonings together in a mixing bowl. Add the butter in pieces and rub together with the fingertips until the mixture resembles fine breadcrumbs.

2. Stir in the grated cheese and the egg yolk. Draw together with the fingertips to form a smooth dough, using a little cold water if the mixture is too dry.

3. Chill in the refrigerator for at least 30 minutes.

4. Roll out the dough thinly on a floured board and cut into strips about 12.5 cm (5 in) long and 0.5 cm (1/4 in) wide.

5. Place on baking sheets and bake in a fairly hot oven (200°C/400°F or Gas Mark 6) for 10 to 15 minutes or until golden.

6. Remove from the oven, allow to cool slightly, then transfer to a wire rack to cool completely. Store in an airtight tin.

makes approx. 40 cheese straws.
