Peanut Cookies

Calories 75 per cookie,

ingredients

100 g (4 oz) crunchy peanut butter
100 g (4 oz) butter or margarine
100 g (4 oz) caster sugar
75 g (3 oz) soft light brown sugar
2 eggs, lightly beaten
225 g (8 oz) self- raising flour, sifted
40 salted peanuts

method

1. Lightly grease two baking trays. Cream the peanut butter, butter or margarine and sugars until very soft, light and fluffy. Gradually beat in the eggs, then stir in the flour to make a fairly soft dough.

2. Roll the dough into 40 small, evenly sized balls. Place on the prepared baking trays and flatten each ball slightly with the prongs of a fork. Press a peanut in the centre of each biscuit.

3. Bake the cookies in a moderate oven for 20 - 25 minutes or until golden brown. Using a palette knife, carefully remove the cookies from the trays and transfer them to a wire rack to cool completely.

Freezer Tip
For freshly made cookies form half the dough into a roll about 3.5cm (1 1/2 in). in diameter, wrap in foil and freeze. Defrost, cut into slices and cook as above.
