Red-Cooked Beef with Star Anise

ingredients

6 - 8 servings
75 ml (3 fl oz) 3/8 cup Vegetable oil
1 1/2 kg (3 lb) Boned leg (shin) of beef, cubed
3 pieces Star anise
150 ml (5 fl oz) 5/8 cup Water
1/2 Beef stock cube, crumbled
7 Tbs Soy sauce
piece Fresh root ginger, peeled 4 cm (1 1/2 in) and finely chopped
2 tsp Sugar
150 ml (5 fl oz) 5/8 cup) Red wine

method

1. Preheat the oven to cool 150°C (Gas Mark 2, 300°F).

2. Heat the oil in a flameproof casserole. Add the beef cubes and fry until they are evenly browned. Remove from the heat and pour off all the excess oil. Stir in the star anise, water, stock cube and 4 tablespoons of soy sauce. Return the casserole to the heat and bring to the boil, stirring constantly. Transfer to the oven and cook for 1 hour, turning the meat once.

3. Remove from the oven and stir in the remaining ingredients. Return to the oven and cook for a further 2 hours, turning the meat every 30 minutes. Remove from the oven and serve at once.
