Brownies

The chocolate nut brownie is now part of American culture?children are reared on them, adults survive on them, and everyone enjoys them. Although they are basically a snack, they make a superb 'instant* dessert with vanilla ice-cream.

ingredients

16 brownies
175 g (6 oz) 6 squares Dark cooking (semi-sweet) chocolate
2 Tbs Water
125 g (4 oz) 8 Tbs Butter
125 g (4 oz) 1/2 cup Castor (superfine) sugar
1 tsp Vanilla essence (extract)
125 g (4 oz) 1 cup Self-raising (self-rising) flour
1/8 tsp Salt
2 Eggs
50 g (2 oz) 1/3 cup Walnuts, chopped

method

1. Preheat the oven to warm 170°C (Gas Mark 3, 325°F).

2. Put the chocolate, water and butter in a saucepan and heat over low heat, stirring constantly until the chocolate has melted. Remove from the heat and stir in the sugar and vanilla. Cool to room temperature.

3. Sift the flour and salt into a bowl, then gradually beat in the chocolate mixture, eggs and finally the walnuts. Pour the mixture into a shallow well-greased 20 cm (8 in) square baking tin. Put into the oven and bake for 30 to 35 minutes, or until a knife inserted into the centre comes out clean. Serve cool.
