Rhubarb Orange Compote

ingredients

serves 4
1 lb (450 g) rhubarb
2 oranges, segmented
juice and rind of 1 orange

method

1. Cut the rhubarb into 1 inch (2.5 cm) lengths.

2. Place in a saucepan with the remaining ingredients.

3. Simmer for 10 to 12 minutes until tender.
