Whisk 2 cups (400 g) 14 oz yoghurt until very smooth. Add 1/2 cup water and whisk again to blend well. Pour this mixture into a round-bottomed pan and cook on high heat. Stir constantly till the mixture comes to the boil. Then reduce heat to low,
stirring occasionally, until the mixture is reduced to half its original quantity, and its colour has changed to off-white. Use as required in the recipe.
