1/2 mango, stone removed
method
1. Taking care not to cut the skin, just the flesh, cut across the flesh of the mango at 1cm/0.5in intervals.
2. Now cut diagonally across in the same way, to make a criss-cross pattern.
3. Fold the mango inside out so the flesh is on the outside and the cuts separate to form cubes of mango (still attached to the skin).
4. Serve.
