25 g (1 oz) butter or margarine
675 g (1 1/2 lb) baby carrots, finely chopped
225 g (8 oz) canned mandarin orange segments, drained and finely chopped
50 ml (2 fl oz) water
50 ml (2 fl oz) fresh lime juice
1/4 tsp salt
method
1. Melt the butter medium-sized saucepan.
2. Add the remaining ingredients and simmer over a low heat for 20 minutes.
