Baked Pumpkin With Parsnips And Carrots

ingredients

1 1/2 lb (670 g) pumpkin, cut into 2 inch (5 cm) cubes
1 lb (455 g) carrots, cut into matchsticks
1.2 lb (225 g) parsnips, cut into matchsticks
3 teaspoons oil
1 dessertspoon honey (optional, this is a naturally sweet dish)
1 teaspoon sea salt
A little freshly ground black pepper (optional)

method

1. Saute the vegetables lightly in the oil for 5 - 10 minutes.

2. Add the honey and seasoning, then bake in a covered, ovenproof casserole for 30 - 40 minutes, at 375°F (190°C) gas mark 5.

3. Serve garnished with freshly chopped parsley.
