Carrot Spread

ingredients

2 lb (900 g) carrots, chopped
1 - 2 tablespoons water
1 tablespoon miso or yeast extract

method

1. Simmer the carrots gently in the water until tender.

2. Sieve or blend and simmer again with the miso. Stir frequently and cook without lid to thicken.

3. Cool, cover and store in jam jars in the refrigerator. Use within 7 days.
