Pumpkin Soup #2

ingredients

1.2 lb (225 g) onions, diced
1 - 2 tablespoons oil (optional)
1 lb (455 g) pumpkin, diced
2 pints (1.1 litres) water or kombu stock
1 - 2 teaspoons miso or yeast extract

method

1. Simmer or saute the onion for 5 minutes.

2. Add the pumpkin and the water and simmer for 15 - 20 minutes until tender.

3. Season to taste with the miso and simmer for a further 3 minutes to blend the flavours.

4. Serve garnished with fresh, chopped herbs.
