30 ml (2 tbsp) oil
2 cloves garlic, crushed
Salt and pepper
1 large cucumber, cut into chunks
60 ml (4 tbsp) tomato puree (paste)
15 ml (1 tbsp) chopped fresh thyme
15 ml (1 tbsp) chopped fresh tarragon
method
1. Heat the olive oil in a frying pan and add the crushed garlic. Cook until brown.
2. Sprinkle salt over the cucumber pieces and allow to drain on kitchen paper for 10 minutes.
3. Add to the pan and fry for 3 minutes. Blend in the remaining ingredients and simmer for 5 minutes.
