Papaya with Chilli Syrup

ingredients

serves 1-2
1/2 red chilli, de-seeded and chopped
1 lime, juiced
55 g (2 oz) caster sugar
1 papaya, de-seeded and sliced

method

1. Heat the chilli and lime juice in a pan for 2 - 3 minutes. Add the sugar to the pan and stir until dissolved.

2. Heat gently for 2 - 3 minutes until reduced.

3. Place the papaya onto a serving plate and pour over the chilli syrup.

4. Serve.
