1/2 melon, seeds removed and pulp scooped out
splash of white wine
salt and freshly ground black pepper
1/4 onion, finely chopped
sprig of mint
drizzle of cream
1. Place the melon, wine and seasoning into a food processor and blend together until very smooth.
2. Pour the soup into a serving bowl and garnish with the onion and mint.
3. drizzle the cream onto the surface and serve.
