Ginger and Orange Rice Pudding

ingredients

200 g (7 oz) rice
200 ml (7 fl oz) coconut milk
1 vanilla pod, split
1 orange, juice and zest only
75 ml (3 fl oz) double cream
2 tsp ginger, grated
200 ml (7 fl oz) milk
2 tbsp caster sugar

to serve

icing sugar to dust

method

1. Put all the ingredients in a pot and gently bring to a simmer.

2. Simmer for 10 - 12 minutes or until the rice is tender.

3. Put into a serving dish, dust with icing sugar and serve.
