Grilled Smoked Haddock

ingredients

serves 4
450-575 g (1 - 1 1/4 lb) smoked haddock fillet, trimmed and cut into serving portions
melted butter or oil for brushing
4 pats of Herb Butter to serve

method

1. Place the fish in a large frying pan and pour in boiling water to cover. Leave to stand for 5 minutes. Carefully remove each portion with a fish slice, drain well and arrange, skin side up, in a grill pan.

2. Grill under moderate heat for 3-5 minutes, depending on the thickness of the fish. Turn the fish over, brush the uncooked sides generously with melted butter or oil and grill for 4 minutes more or until tender.

3. Serve on individual warmed plates, topping each portion with a pat of chilled herb butter.
