1. Place the fish in a large frying pan and pour in boiling water to cover. Leave to stand for 5 minutes. Carefully remove each portion with a fish slice, drain well and arrange, skin side up, in a grill pan.
2. Grill under moderate heat for 3-5 minutes, depending on the thickness of the fish. Turn the fish over, brush the uncooked sides generously with melted butter or oil and grill for 4 minutes more or until tender.
3. Serve on individual warmed plates, topping each portion with a pat of chilled herb butter.
