ingredients

1 kg Brussels sprouts
75 g hot butter
salt and milled pepper

method

1. Trim any discoloured or coarse outer leaves. Wash in cold salt water.

2. Place the sprouts into boiling salted water, skim and boil steadily for 8 minutes until tender but still fairly firm, Drain well. toss in 75 g hot butter until slightly golden. Season with salt and milled pepper.
