100 g chopped onion
25 ml olive oil
2 kg shelled broad beans
300 ml stock
100 g diced mortadella
fried bread croutons
method
1. Sweat 100 g chopped onion in 25 ml olive oil, then add 2 kg shelled broad beans, moisten with 300 ml stock and simmer for 10 minutes until almost cooked.
2. Add 100 g diced mortadella and finish cooking, season and serve in vegetable dishes, garnished with fried bread croutons.
