Herb Vegetables (Verdura con Gliodori)

ingredients

serves 4
900 g (2 lb) carrots
2 sticks celery
2 potatoes
1 onion
15 ml (1 tbsp) unsalted (sweet) butter
1 bay leaf
30 ml (2 tbsp) dry sherry
Large bunch herbs

method

1. Dice the carrots, celery and potatoes and finely chop the onion.

2. Place the butter in a saucepan and when hot fry the vegetables.

3. Add the remaining ingredients and continue cooking until tender.

4. Remove the herbs and bay leaf before serving.
