Brussels Sprouts with Chestnuts (Choux de Bruxelles Limousin

serves 10
1 kg Brussels sprouts
1 kg Braised chestnuts
hot chicken fat

method

1. Trim any discoloured or coarse outer leaves. Wash in cold salt water.

2. Place the sprouts into boiling salted water, skim and boil steadily for 8 minutes until tender but still fairly firm, Drain well.

3. Then add an equal amount of braised chestnuts and toss in hot chicken fat.
