method
1. Place 225 g shin of beef, 450 g hand of pork, 225 g breast of lamb and 1 x 1.5 kg chicken in a pan, cover with water, season and simmer until tender.
2. Remove all the flesh from the bones and cut it into large dice. Simmer 350 g each of chopped onion, sliced carrot and diced potato, 125 g each of sliced okra and lima beans and 1 fresh red chilli in the cooking liquid from the meat, then add 675 g tomato concassee, the diced meats, Worcester sauce, Tabasco sauce and cayenne pepper.
3. Cook until it is reduced to a thickish consistency and serve.
