Braised Celery and Tomato (Sedano e Pomodoro Brasati) recipe
ingredients
2 large heads celery, trimmed
25 g (1 oz) 2 tbsp unsalted butter
1 onion, chopped
450 g (1 lb) tomatoes, peeled and roughly chopped
Salt and pepper
30 ml (2 tbsp) chopped fresh basil
8 olives to garnish (optional)
method
1. Bring a pan of salted water to the boil.
2. Cut the celery into 9 cm (3 1/2 inch) pieces and add to the boiling water.
3. Simmer for 3 minutes and drain. Melt the butter and fry the chopped onion for 3 minutes.
4. Add the celery and tomatoes and season with the salt, pepper and basil.
5. Cover the pan with a lid and simmer for 10 minutes. Turn into a heated serving dish and garnish with the olives.
