method
1. Grease an ovenproof baking dish. Set the oven at 190°C/375°F/gas 5. Make 3 shallow cuts on either side of each herring and sprinkle with salt and pepper.
2. Melt half the butter in a frying pan. Add the onions and fry gently for 5 minutes. Place the tomato slices on the base of the prepared dish. Add the onions and sprinkle with salt and pepper, and the vinegar.
3. Arrange the fish on top and dot with the remaining butter. Cover and bake for 45 minutes. Garnish with parsley.

Careful with the salt

Do not sprinkle too much salt on the fish. careful with the vinegar too!
