12 smelts, cleaned and trimmed
2/3 cup (100 g) dry white breadcrumbs
1/2 stick (2 oz) 50 g butter
salt
cayenne pepper
squeeze of lemon juice
for the garnish
fried parsley
lemon wedges
method
1. Set the oven at 190°C/375°F/gas 5.
2. Arrange the fish in a shallow ovenproof baking dish.
3. Cover the fish with the breadcrumbs and dot with the butter. Sprinkle with plenty of salt and cayenne and bake for 15 minutes.
4. Just before serving, add a squeeze of lemon juice. Serve garnished with fried parsley and lemon wedges.
