75 ml (2 1/2 fl oz) double cream
1/2 melon, peeled, de-seeded and diced
squeeze of honey
squeeze of lemon juice
a few melon slices
sprig of fresh mint, to garnish
method
1. Place the melon pieces into a mini food processor and blend together to form a purée.
2. Place the cream and melon purée into a large bowl with the honey and lemon juice. Whisk together until just stiff.
3. Spoon the mousse into a tall serving glass or serving bowl and arrange the melon slices on top.
4. Garnish with the mint to serve.
