method
1. Set aside the red-coloured fruit and place the rest of the fruit in a blender.
2. Add the sugar and water and blend into a fine purée, adding more water if the purée appears too thick.
3. Pour the fruit soup into serving bowls and top with a ball of frozen yoghurt each.
4. Garnish with the reserved red fruit and sprigs of mint. Serve immediately.
