1. Gently melt the butter in a pan and fry the apples for 2 - 3 minutes to soften.
2. Add the icing sugar to the pan and cook for a further 2 - 3 minutes or until the apples begin to brown. Add a squeeze of lemon juice and heat for a further 1-2 minutes over a gentle heat.
3. Meanwhile, whisk the egg yolks and caster sugar in a bowl.
4. Heat the milk and vanilla extract in a pan and bring almost to the boil. Gradually pour the hot milk into the bowl with the egg yolks, whisking constantly. Return the mixture to the pan and, stirring constantly, very gently warm the custard through until thickened.
5. To serve, transfer the caramelised apple to a serving plate or dish and pour the custard over to serve.
