1. Preheat the oven to 220°C (425°F) Gas 7.
2. Heat the sugar in an ovenproof pan until a caramel has formed. Add the peaches and shake the pan to coat.
3. Heat the milk, cream, vanilla, flour and caster sugar in a pan for a few minutes. Fold in the two eggs and mix to combine.
4. Pour the mixture into the pan with the peaches and then bake in the oven for 8 - 10 minutes or until golden.
5. Remove from the oven and serve
