1. Preheat the oven to 220°C (425°F) Gas 7.
2. Gently melt the butter, sugar and lemon juice in a pan until the sugar is caramelised.
3. Add the pear slices and fry for 4-5 minutes. Transfer to the oven and cook for a further 5-6 minutes, to soften.
4. For the sauce, whisk the honey, cocoa powder and water in a small pan over a low heat until combined. Warm through for a few minutes.
5. Transfer the caramelised pear slices to a serving plate and drizzle the chocolate sauce over to serve.
