750 ml (1 1/4 pt) yoghurt
2 large cucumbers, peeled, thickly sliced and then quartered
2 large onions, finely chopped
100 g (4 oz) walnuts, chopped
2.5 g (1/2 tsp) salt
2.5 g (1/2 tsp) white pepper
15 g (2 tbsp) chopped fresh mint
method
Combine all the ingredients in a large mixing bowl, and mix thoroughly, taking care not to bruise the cucumber slices.
