method
1. Heat oil in a heavy pan with a lid. When it is hot, add the mustard seeds.
2. As soon as the mustard seeds begin to pop, pile in the shredded vegetables, drizzle over the honey and stir well.
3. Turn down the heat, put on the lid and cook for about 3 minutes until just tender. Season and serve.

And what do I do with the carrots please?
The carrots are shredded, pile in the shredded vegetables means the carrots as well.
