This crisp salad is a refreshing change from the usual coleslaw.
ingredients
225 g (8 oz) white cabbage, trimmed, cored and shredded
2 medium carrots, peeled and grated
1 large green-skinned apple, cored and sliced
4 spring onions, trimmed and sliced
150 ml (1/4 pt) Curry Mayonnaise
50 g (2 oz) cashew nuts or dry-roasted peanuts
salt and freshly ground pepper
coriander leaves
method
1. Put the cabbage, carrots, apples and onions into a mixing bowl.
2. Add the Mayonnaise and nuts and toss well. Taste for seasoning.
3. Spoon into a salad bowl and serve garnished with coriander leaves.
Add shredded chicken, diced ham, prawns or shrimps to the salad for a main dish.
