Onion Spread

ingredients

2 lb (900 g) onions, finely sliced
1 tablespoon oil
Pinch of sea salt
1 - 2 tablespoons water

method

1. Gently saute the onions in the oil with a pinch of sea salt for 2 - 3 minutes.

2. Add the water, and cook slowly, stirring occasionally, until the mixture is smooth and very sweet.

3. Cool, cover and store in jam jars in the refrigerator. Use within 7 days.
