1. Place the peppers under a pre-heated grill, then put them in a brown paper bag to soften the skins. Skin and finely slice.
2. Heat the oil in a frying pan and cook the onion until soft. Stir in the peppers and cook for 5 minutes.
3. Pour in the beaten eggs and stir until cooked. Season with the sage and pepper and serve.
