Quick Piperade (Piperade "alla Svelta")

ingredients

serves 4
2 red (bell) peppers
2 yellow (bell) peppers
1 red onion, finely sliced
30 ml (2 tbsp) olive oil
6 eggs, beaten and strained
15 ml (1 tbsp) chopped fresh sage
1.5 ml (1/4 tsp) pepper

method

1. Place the peppers under a pre-heated grill, then put them in a brown paper bag to soften the skins. Skin and finely slice.

2. Heat the oil in a frying pan and cook the onion until soft. Stir in the peppers and cook for 5 minutes.

3. Pour in the beaten eggs and stir until cooked. Season with the sage and pepper and serve.
