Pan-roasted Radicchio

ingredients

serves 4
3 heads radicchio, trimmed
50 g (2 oz) 1/2 cup butter
15 ml (1 tbsp) olive oil
5 ml (1 tsp) nutmeg
Salt and pepper

method

1. Wash the radicchio and dry on kitchen paper.

2. Break into half and then quarter.

3. Melt the butter in a frying pan and stir in the oil.

4. Lay the radicchio in the oil and cook for 4 minutes.

5. Toss well and pour into a serving dish. Sprinkle with the nutmeg, salt and plenty of pepper.
