1 bunch spring onions (scallions)
50 g (2 oz) 1/4 cup unsalted (sweet) butter
1 lettuce, shredded
450 g (1 lb) peas, shelled
5 ml (1 tsp) brown sugar
Salt and pepper
2.5 ml (1/2 tsp) nutmeg
method
1. Chop the spring onions. Melt the butter in a pan and add the lettuce, spring onions peas and sugar.
2. Cover and simmer gently for 20 minutes until the peas are tender.
3. Season to taste with the salt and pepper. Transfer to a serving dish and sprinkle over the nutmeg.
