KOMBU STOCK

ingredients

2 pints (1.1 litres) water
One 6 inch (15 cm) strip of kombu seaweed

method

1. Bring the water to the boil with the kombu, and simmer for 20 - 30 minutes.

2. Use the resulting stock for soups, casseroles, gravies and sauces.

Slice the kombu into strips and add to stews or casseroles.
