1 onion, large
225 g (8 oz) 1 cup boiled and mashed potatoes
50 g (2 oz) 1/4 cup unsalted (sweet) butter
Salt and pepper
50 g (2 oz) 4 tbsp flour
2 egg yolks
1.5 ml (1/4 tsp) cayenne pepper
15 ml (1 tbsp) chopped fresh sage
Oil for frying
method
1. Grate or finely chop the onion.
2. Mix the potato with the onion, butter and seasoning.
3. Blend in the flour, egg yolks, cayenne and sage.
4. Form into small even-sized cakes and fry in hot oil until brown and crispy on the edges.
