Potato Gnocchi (Italian)

ingredients

serves 4 - 6
750 g (1 1/2 lb) potatoes
Salt and pepper
225 g (8 oz) 2 cups flour
1 egg
15 g (1/2 oz) 1 tbsp butter
75 g (3 oz) 3/4 cup grated Parmesan cheese

method

1. Boil the potatoes in salted water for 12 minutes until just tender. Sieve and season.

2. Blend with the flour, egg and butter. Form into balls and cook in boiling salted water for 10 minutes.

3. Drain and sprinkle with the Parmesan cheese.
