8 canned anchovies, drained
8 thick slices bread, crusts removed
8 slices Mozzarella cheese, cut 1 cm (1/2 in) thick
3 ripe tomatoes, skinned and seeded
Salt and pepper
3 eggs, beaten
Oil for frying
Chopped fresh oregano
method
1. Cut each anchovy in half. Cut the slices of bread in half. Cover each slice of bread with cheese, anchovy and tomato and season with salt and pepper.
2. Cover with a slice of bread to make a sandwich and lay in the beaten egg.
3. Turn to coat the other side of the bread and leave to stand for 40 minutes.
4. Heat the oil in a shallow frying pan and cook the sandwich until crisp and lightly browned on both sides.
5. Drain and serve hot sprinkled with the oregano.
