8 courgettes (zucchini), trimmed
25 g (1 oz) 2 tbsp butter
15 ml (1 tbsp) oil
45 ml (3 tbsp) lemon juice
30 ml (2 tbsp) chopped fresh oregano
Salt and pepper
method
1. Slice the courgettes (zucchini) in half, lengthways and place in a large pan with half the butter.
2. Add the olive oil and cook for 8 - 10 minutes, turning once.
3. Add the lemon juice and stir in the remaining butter and oregano.
4. Transfer to a warmed serving dish, season and serve immediately.
