Bean Soup #3

ingredients

serves 4 - 6
225 g (8 oz) haricot beans
15 - 30 ml (1 - 2 tbsp) oil
1 onion, chopped
1 clove garlic, chopped
2 carrots, chopped
2 stalks celery, sliced
200 g (7 oz) tomatoes, peeled (or a small can)
1 slice lemon
soy sauce
salt and freshly ground black pepper
parsley

method

1. Soak the beans overnight.

2. Bring to the boil in a large pan of water about 1 litre (l 3/4 pts) and simmer until tender.

3. Meanwhile, heat oil in a frying pan and cook onion and garlic until soft.

4. Add carrots, celery and tomatoes, in that order, stirring all the while.

5. Tip vegetables into the pan with the cooked beans.

6. Add the slice of lemon and soy sauce. Taste and adjust seasoning.

7. Heat through and serve sprinkled with chopped parsley.

8. The soup may be partly pureed if you like.
