50 g (2 oz) 1/8 lb ham
50 g (2 oz) 1/2 cup grated Parmesan cheese
1.5 ml (1/4 tsp) nutmeg
16 large olives, pitted
15 ml (1 tbsp) flour
1 egg, beaten
50 g (2 oz) 1 cup fresh breadcrumbs
Oil for frying
method
1. Mince the ham and add the grated cheese and nutmeg.
2. Fill the olives with the mixture.
3. Dip each of the olives, first in the flour, then in the beaten egg and lastly in the breadcrumbs.
4. Fry in hot oil and drain thoroughly. Serve hot or cold.
