Courgette Fritters (Fritelle di Zucchine)

ingredients

serves 3 - 4
225 g (8 oz) 1/2 lb courgettes (zucchini), grated
45 ml (3 tbsp) flour
2 eggs
10 ml (2 tsp) chopped fresh sage
1 clove garlic, crushed
Salt and pepper
75 ml (5 tbsp) oil

method

1. Put the courgettes, flour, eggs, sage and garlic in a bowl and season with salt and pepper.

2. Heat the oil in a pan and drop 15 ml (1 tbsp) of the mixture for each fritter into the hot oil.

3. Cook until golden on both sides, drain on kitchen paper and keep warm until ready to serve.

Problem with uncooked garlic

Might be better to leave the garlic out of these as they don't actually cook for that long. Next time I shall serve them with a tomato & garlic salsa and pep them up that way. My 4 & 5 year old boys like them and will be eating them cold tomorrow!
