6 anchovy fillets, mashed
150 ml (5 fl oz) 2/3 cup Ricotta cheese
75 g (3 oz) 1/2 cup olives, pitted and chopped
15 ml (1 tbsp) chopped fresh thyme
Juice of 1/2 lime
Salt and pepper
method
1. Blend the anchovies into the Ricotta cheese and mix until smooth.
2. Stir in the olives and thyme.
3. Mix in the lime juice and season with the salt and pepper.
