1. Freeze the turkey until very firm.
2. Slice very thinly, using a sharp knife or the slicing disc of a food processor, then turn into a shallow glass or china bowl.
3. Using the metal blade, liquidize or process the garlic with the ginger.
4. Add all the remaining ingredients, except for the oil and blend for 20 seconds.
5. Tip into the bowl and stir into the sliced turkey until well mixed.
6. Cover and leave to marinate overnight in the fridge.
7. When ready to serve, heat the oil in a heavy saute pan or heavy deep-frying pan.
8. Add the meat and the marinade and fry over medium high heat for about 10 minutes, stirring frequently, until the turkey is golden brown and slightly crispy.
9. Serve hot with Nutty Rice Pilau or Spicy Potatoes or cold with a tossed green salad, and a rice salad.
