Salad of Beansprouts and Bean Curd

ingredients

serves 4
225 g (8 oz) can beansprouts
1 square bean curd, cut into small dice
fat for frying
2.5 g (1/2 tsp) chilli powder
30 ml (2 tbsp) oil
juice 1 lemon onion, crisply fried

method

Soak the beansprouts in cold water. Toss into boiling water for 1 minute, then drain and rinse with cold water.

Fry the bean curd in fat until it is crisp; drain.

Put the beansprouts, chilli powder and oil in a bowl and toss together.

Squeeze over the lemon juice. Taste for seasoning.

Just before serving, add the crisp bean curds and top with fried onion.
