With fresh crusty bread, this aromatic and refreshing salad is virtuallv a meal in itself.
ingredients
450 g (1 lb) ripe tomatoes, skinned and cut into 2.5 cm (1 in) chunks
225 g (8 oz) feta cheese, cut into 2.5 cm (1 in) chunks
50 g (2 oz) black olives, stoned
45 ml (3 tbsp) good olive oil
1 - 2 cloves of garlic, finely chopped
15 g (2 tbsp) fresh basil leaves, coarsely chopped
2.5 g (1/2 tsp) sugar
freshly ground black pepper
method
Combine the tomatoes, feta and olives in a glass serving bowl, and add the oil, garlic, basil and sugar.
Sprinkle with plenty of freshly ground black pepper and stir gently.
Leave in a cool place for at least an hour for the flavours to combine before serving.
