Tsatziki

ingredients

serves 4
1 large cucumber, unpeeled
2.5 g (1/2 tsp) salt
2 cloves garlic, finely chopped
450 ml (1/4 pt) thick Greek yoghurt
pepper
a little lemon juice

method

Coarsely grate the cucumber into a colander. Sprinkle with the salt and leave to drain for about 1 hour.

Stir in the drained cucumber and garlic into the yoghurt and add pepper and lemon juice to taste.

Serve chilled.

I had to play around with the amount of yoghurt stated, as 450ml is not 1/4 pt as it states!!
Worked out in the end though and enjoyed it.
