1. Drain the yoghurt for 3 hours. Whip the cream and fold into the drained yoghurt.
2. Add the lemon juice and sugar and stir well to dissolve the sugar.
3. Use as required. It is very good as a dressing over fruit salad, or folded into a fruit salad, or over individual fruits, berries, pineapple, bananas or mangoes.
4. Add more lemon juice, and some finely grated rind, or orange juice and rind.
5. Substitute 225 g (8 oz) quark, fromage blanc or curd cheese for the yoghurt.
